Sweet Potato Parmesan Fries Recipe

One of our favourite party recipes, Sweet Potato Parmesan Fries.

One of our favourite foods for friends. The sprinkling of parmesan cheese makes sure these sweet potato fries are super crispy and super tasty!

An easy food recipe that you will be able to whip up in 45 minutes.

1kg sweet potatoes
8–10 garlic cloves
a glug olive oil
a pinch of salt
2 sprigs of rosemary, leaves stripped
50g Parmesan cheese

  1. Preheat the oven to 190°C (375°F), Gas Mark 5. Wash the sweet potatoes, but don’t peel them.
  2. Cut each potato in half lengthways, then into 1cm (1⁄2 inch) thick chips. Smash the garlic cloves with a flat side of your knife blade, keeping the skins on.
  3. Toss the chips in a bowl, together with the smashed garlic and the oil. Add the salt and ensure the chips are well coated.
  4. Tip them on to a roasting tray and arrange them in a single layer. Bake for 30 minutes.
  5. Sprinkle the rosemary and Parmesan all over and shake the tray to combine. Return to the oven for 3–5 minutes to allow the Parmesan to become crispy.
  6. Serve sprinkled with sea salt flakes and with a bowl of good mayo alongside.
